What does everyone use to cut their covers with?

I use a fiskars portable craft paper trimmer like this.

I use a Dahle 507 :)

Its precise and has a good sharp rol knife

Fiskers Surecut..

I also have a new in the box commercial classroom cutter that some one gave me but I've never used it. The kind with a 20" manual blade arm you pull down.

I use a similar thing to what Voetzoker has posted above, albeit a different brand. Looks more or less the same, though. I had a cheap guillotine for a while, but it quickly wore out and started to tear rather than cut the paper.
