Awesome color treatment! If you could lighten up the bottom half of that back picture a little more, I think that'd look perfect. The other shots you've been choosing looked great too.
On the front, the mood is really well done, but the top 15% looks so sparse at the moment. If there's more to the image, perhaps you can move him up a bit? Or, what if you made everything a bit bigger? It might ruin the mood you've built, though. Hmm...
Also, have you considered removing that bar code on the back? :chin:

Don't worry so much about the skin tones, as He's always red in the face coz of his drinking...
Also the light on her face looks real, and his face is in shadows under his Stetson hat.
I like version #2, but could you try fading out her legs (perhaps with some clouds/dust brushes blowing low against the ground she's trotting)?
